Broccoli and Cheese Filled Chicken Breasts
4 boneless chicken breasts with skin
⅟₂ head of broccoli
75g cheddar cheese grated
Salt and freshly ground black pepper
Sunflower oil for frying
First you need to prepare your chicken breast for stuffing – your butcher can do this for you.
Steam or boil the broccoli, when cooked set aside to cool.
>In a small bowl mash together the broccoli and cheese and season.<
Take the mixture and stuff each breast you may need to secure it with trussing band your butcher should be able to supply you with this.
Heat the oil in a large frying pan and place the chicken breasts on the pan skin side down, fry on each side.
Meanwhile preheat oven to 180⁰.
Remove the breasts from the pan, place in an oven proof dish in the preheated oven for 40-45 minutes.
Lovely served with homemade garlic potatoes and fresh vegetables.
